Moar Sambhar or Buttermilk Sambhar is a different and unique recipe . When there is too much of curd at hand, one can make this delicious sambhar ,which is very simple and tasty .
This sambhar is a departure from using tamarind, as it uses sour butter milk.

Ingredients
- Red gram dal / Thuvar dal ½ cup and 2 tablespoon more,
- Sour butter milk 1 cup,
- Salt 1 teaspoon,
- Fenugreek seeds ½ teaspoon,
- Mustard ½ teaspoon,
- Dried Red chilies 6 to 8 (Guntur or Byagadi)
- Green chilies 4 to 6,
- Rice flour 1 teaspoon,
- Ginger ¼ to ½ inch,
- Vegetables Brinjals, drumstick and ladysfinger (Best suited),
- If not available then can use chow chow or chayote, ashgourd, potato, Any one vegetable , chopped medium size ½ cup
- Oil 3 teaspoon,
- Coriander leaves (for garnish)( chopped fine) 1 tablespoon,
- Curry leaves few (6 to 8 in number).
Method
- Pressure cook the dal to soft. Add rice flour to the butter milk and whisk it well. Keep aside.
- In a deep kadai or pan or kalchatti (soap stone), add oil, as it becomes hot, add mustard and fenugreek seeds and red chilies (torn into two) and green chilies (roughly chopped). Saute .
- When shallow fried well, add the chopped drumstick/ ladys finger / brinjal. If other vegetables are used, cook them separately adding a little salt and add to the sambhar, as they require a longer time to be cooked.
- Add the butter milk, salt and boil in medium heat. Add the cooked dal and mix well.
- When all combines and boils once again, remove from fire. Grate ginger and add to the sambhar along with coriander leaves and pinched curry leaves.
- Serve hot with Rice.
Note
- This sambhar can be made with a variation.
- Shallow fry in ½ tablespoon oil, coriander seeds(1 ½ teaspoon), bengal gram dal (1 teaspoon), poppy seeds ½ teaspoon, red chilies (4 to 5 torn into two) to golden brown and till the poppy seeds splutter.
- Grind to smooth paste ,add to the boiling buttermilk. Rest as given above.
- This powder gives a different taste to the buttermilk sambhar. Try it.
