Kesari is one of the commonest sweet one makes in an Indian household .
Generally , it’s made in Semolina , but it could be made with broken wheat rava which is healthier and tastier .
Broken wheat has loads of fibre , diabetic friendly and filling too .
This particular recipe is made with broken wheat , coconut sugar and very little ghee .
This recipe is made for Satyanarayana Pooja too .

- Broken Wheat /Samba Godhumai Rava 2 cups
- Coconut Sugar 2 cups
- Ghee 1/2 cup
- Milk 2 cup
- Water 2 cups
- Cashewnuts 8 to 10
- Cardamom 1 teaspoon
- Raisins 8 to 10
- Pachaikarpuram a pinch (optional)

Method
- In a pressure cooker , cook the broken wheat , adding , water and milk till it becomes soft (2 whistles ).
- In a pan , heat ghee add cashewnuts and fry till light brown and remove .
- Powder the cardamoms .
- Add raisins and fry till they swell. Remove and keep aside
- Add the cooked broken wheat and sugar to the same pan , mix well till sugar dissolves well.
- Add cashewnuts raisins , Pachaikarpuram and cardamom powder.
- A flavourful sweet is ready .
Note
- Please note more ghee can be added to the Kesari,to make it gooey and rich . If you are preparing for festivals , guests or for parties you could add additional ghee .
- Colour can be added, to make it look more attractive.
- Instead of Coconut sugar, ordinary white sugar can be added .
- This dish can be made with jaggery or palm sugar too .
- Pachaikarpuram (edible camphor) can be avoided.
- Generally this is made for Satyanarayana Pooja.
