Bitter Gourd is a vegetable , which is commonly found, in most vegetable markets . However, one does’nt find any takers, for this very much sneered at , vegetable . The bitter taste puts off most people and many avoid cooking this vegetable . Bitter gourd is very beneficial for many stomach related complaints , diabetes ,cleanses the liver ,blood purifier , promotes heart health and many more . If the bitter gourd is cooked with lots of care ,the unpleasant bitter taste, would’nt be found in the dish prepared . According to Ayurveda , the bitter taste of bitter gourd helps in keeping various aliments at bay . It cures various doshas in the body and should be eaten twice a week .
Ingredients
- Bitter gourd 8 ( small size )
- Turmeric Powder 1/4 teaspoon
- Salt 1 teaspoon
- Tamarind (marble size)
- Coconut oil 2 teaspoons
- Mustard 1 teaspoon
- Chilli powder 1 teaspoon
- Asafoetida ( Hing) 1/2 teaspoon
- Sambar Powder 2 teaspoons
- Jaggery ( optional ) 1 teaspoon
Method
- Soak the tamarind in 1 cup water and keep aside for 15 minutes . Extract thick juice and keep aside .
- Chop the bitter gourd into small pieces . and cook in tamarind water . Add salt and turmeric powder . Cook in low heat , till the bitter gourd turns soft .
- In a shallow kadai or pan , add oil and heat . Add mustard and let it splutter . Add chili powder or sambar powder, hing and stir well . Add cooked bitter gourd and fry till everything mixes well .
- Add jaggery , if desired to get a sweet bitter flavour to the dish .
- Long variety of bitter gourd, too can be used for this dish
