This is a Kerala delicacy , which is also made in many parts of Tamilnadu . The soft wafer thin Aappams are tasty with coconut milk . You need a special Aappa Kadai to make Aappams. These kadais are shallow kadais , which are greased and the Aappam batter is swirled in the Kadai to get a thick centre and a thin outer edges.
If you are bored of the usual Idli . Sambaar . Parathas , Upma or Muesli for breakfast ,try Aappam at home.

- Boiled Rice 1 cup
- Raw Rice 1 cup
- Coconut 1 big
- Salt 2 teaspoons
- Soda bicarb 2 pinches

- Soak both the rice , for 3 to 4 hours.
- Break the coconut and collect the sweet water , Add to the drained rice and grind to a smooth batter. Add salt and mix well.
- Keep for Fermenting for 10 to 12 hours.
- Grate the coconut and grind it adding 1 1/2 cups of water to get a thick coconut milk.
- Add the milk and soda to the prepared fermented batter . Stir .
- Now the batter is ready to prepare delicious Aappam
Enjoy with Korma or coconut milk.
