Kaalan is a Keralite delicacy . Its a part of Onam Sadya menu . Its also made regularly by Palghat Brahmin community . Basically many of the Kerala cuisine, has loads of coconut and coconut oil usage in it . This too is one such recipe . Use slightly sour curd for the recipe to get the authentic taste .
Ingredients
- Curds / Thick buttermilk ( slightly sour ) 2 cups
- Yam / Chenai or Raw Green Banana chopped medium size 3/4 cup
- Salt as per your taste
- Turmeric Powder 1/2 teaspoon
- Coconut oil 2 teaspoon
- Green chili 2 ( chopped )
- Coconut (grated) 1/2 to 1 cup
Method
- Churn the curd or buttermilk well and keep aside .
- Cook the chopped vegetable ,adding salt and turmeric powder.
- When well cooked , add the curd and cook in low heat .
- As it boils , after some time it starts foaming . Remove the foam with a teaspoon and collect in a bowl.
- Grind the coconut ,green chilies and foam to a thick smooth paste .
- When the curd reduces to half its quantity, add the ground paste and mix well .
- Cook for 2 to 3 minutes and drizzle coconut oil over the top.
- Kaalan is ready to eaten with hot rice and Pappad .
