Butter Milk / Neer Mor/ Chaas/ Chaach

NEER MORU IN TAMIL , Sambharam in Malyalam ,

Simple refreshing , cooling drink with absolute low calories .
It aids digestion too .
The variety of spices and herbs added to it like cumin , ginger , omam , green chilies , curry leaves , coriander leaves , make it flavorful .
It is said what is Amrith to Gods , Buttermilk is to humans .
In the ancient days, milk was churned to get butter and the left over water or whey, was used to make Buttermilk.
Nothing was wasted .
It’s highly acclaimed in Ayurveda, used as a medicine to cure diarrhoea and dysentery.
So let’s offer this wonderful drink to God and distribute to all those who serve us , in and around the house .

Ingredients

  1. Curd 2 cups
  2. Water   4 to 6 cups
  3. Green chilies 2 ( chopped fine)
  4. Ginger ( grated)   1 teaspoon
  5. Salt  as desired
  6. Hing / Perungaayam/ Asafoetida   1/2 teaspoon
  7. Cumin seeds ( powdered )   1/2 teaspoon  (optional )
  8. Curry leaves   few
  9. Coriander leaves few .
  10. Black salt  (optional )  a  pinch or two

  • Add the water to the curd and churn well in a blender or with a churner . Make a paste of green chilies and ginger .
  • Add salts , green chili – ginger paste , hing and stir .
  • Add curry leaves torn into two and chopped coriander leaves as garnish. Keep the butter milk  in a mud pot and relish or chill them in a refrigerator and serve  .
  • Add water depending on the thickness you need . If you like a thicker buttermilk,  reduce the water and vice versa.
