In the ancient days, milk was churned to get butter and the left over water or whey, was used to make Buttermilk.
Nothing was wasted .
It’s highly acclaimed in Ayurveda, used as a medicine to cure diarrhoea and dysentery.

Ingredients
- Curd 2 cups
- Water 4 to 6 cups
- Green chilies 2 ( chopped fine)
- Ginger ( grated) 1 teaspoon
- Salt as desired
- Hing / Perungaayam/ Asafoetida 1/2 teaspoon
- Cumin seeds ( powdered ) 1/2 teaspoon (optional )
- Curry leaves few
- Coriander leaves few .
- Black salt (optional ) a pinch or two

- Add the water to the curd and churn well in a blender or with a churner . Make a paste of green chilies and ginger .
- Add salts , green chili – ginger paste , hing and stir .
- Add curry leaves torn into two and chopped coriander leaves as garnish. Keep the butter milk in a mud pot and relish or chill them in a refrigerator and serve .
- Add water depending on the thickness you need . If you like a thicker buttermilk, reduce the water and vice versa.
