Summer are the pickle season in India.
When tomatoes are flooding the market ,thought of making thokku , a kind of pickle , with the texture of chutney .
The tangy spicy tomato thokku can be had with curd rice (obviously what else ), rotis , bread , mixed rice pulao .
You could eat appadiyae too (just like that )…
It’s tantilizingly tasty .
Use country tomatoes for best taste .
Ingredients
- Country Tomatoes 1 kg
- Salt 2 tablespoons
- Fenugreek seeds1 teaspoon
- Chilli powder one fourths of a cup
- Asafoetida half to three fourths of teaspoon
- Turmeric powder half teaspoon,
- Gingely oil 1cup
- Mustard 2 teaspoon
- Red chilli powder
Method
- Chop the tomatoes , fine .
- Heat a cast iron deep pan , add gingelly oil , when it gets hot, add mustard .
- As it splutters add chopped tomatoes , salt , turmeric powder and chilli powder , mix well .
- Cook well ,till all the water gets evaporated, becomes thick and it moves as a single mass .
- The oil too will be surface on top .
- Broil the fenugreek seeds , powder and add .
- Add asafoetida powder and stir .
- Remove from heat and cool .
- Store and use when required
- If you refrigerate, it will stay unspoilt for more than 10 days .
Note
- Add chilli powder ,salt according to.your taste and liking .
- Use gingelly oil for a different flavour , other oils too can be used .
- One can add onions and garlic too in the thokku
- Tamarind too can be added to make it further tangier
- If country tomatoes are not available , use the hybrid ones
