Ash Gourd Koottu (Poosanikai Koottu)

Ash gourd is a commonly available vegetable used in  sambhar, curries, poriyals and koottu. It blends easily with most other vegetables and doesn’t have a overwhelming taste. Its a watery vegetable, hence care should be taken while cooking.

Ingredients

  • Ash gourd (chopped medium size ) 2 cups,
  • Coconut grated ½ cup,
  • Green chillies 3 to 4 nos chopped into two,
  • Cumin ½ teaspoon,
  • Salt, oil 1 teaspoon
  • Mustard ½ teaspoon
  • Black gram dal ¼ tsp,
  • Curry leaves few.

Method

  1. Cook the ash gourd to tender but not too soft. Grind the coconut green chillies and cumin to a smooth paste.
  2. Add the paste to the ash gourd mixture and boil for two to three minutes.
  3. Heat oil in a pan, add mustard as it pops, add black gram dal and curry leaves, garnish over the koottu.
  4. Tasty side dish for rice is ready. Enjoy.
