Lemon Rice

Lemon rice is yet another one pot meal which is a savior for most people on the go. Also it is tasty, tangy and filling.  When one is feeling lazy to make a elaborate meal but need to satiate  hunger quickly, making this mixed rice helps, as it can be prepared quickly. Also when  vegetables are due for replenishment in the kitchen , preparing  mixed rice is a great option. Its colorful and is good lunch box option  .Lemon Rice is also made for picnics and short journeys .

The goodness of lemon , which is rich in Vitamin C and Vitamin B6, is packed in Lemon Rice.

Ingredients

  • Lemon juice of two big lemons (filtered),
  • Oil 6 to 8 teaspoon,
  • Mustard 1 ½ teaspoon,
  • Green chillies (finely chopped) 4 to 6,
  • Curry leaves a few,
  • Bengal gram dal or chana dal 2 teaspoon,
  • Asafoetida ¼ teaspoon,
  • Turmeric powder ¼ teaspoon to ½ teaspoon,
  • Cooked rice 1 ½ to 2 cups,
  • Salt 1 teaspoon.
  • Salted and fried Manathakkali( Turkey berry) 1 tablespoon (optional)

Method

  1. Soak the Bengal gram dal or chana dal for 10 to 15 minutes.
  2. In a shallow pan, add oil and heat it.
  3. Add mustard, as it splutters, add green chillies, curry leaves, soaked and drained Bengal gram dal, asafoetida, turmeric powder and fry for a minute.
  4. Take cooked rice in a big bowl or a tray, add some raw oil over it (1 teaspoon) and with a fork just mix it. Add lemon juice  , salt and the seasonings. Mix well. Serve with appalams or vadams.
  5. Pickles too go well with the rice.
  6. Add more lemon juice ,if you need a tangier taste .

Note

  1. The rice shouldn’t be cooked too soft or  mushy but just enough so that they are separate, this is the rule to be followed, for all mixed rice recipes.
  2. To add crunchiness to the recipes, add ground nuts or cashew nuts.
  3. Use cold pressed groundnut  or sesame oil for the seasoning .
