How to make decoction coffee

As the world celebrates newer versions of the drink like Mocha, Latte Frappe, Espresso etc the  South Indian filter coffee rules the roost in this part of the country. While rest of the world drinks coffee  sans milk, in India and some parts of Asia, coffee is drunk adding generous amount of milk. The coffee filter is a common feature in a Tamilian kitchen.

Coffee and Tamilian cannot be separated. Every Tamilian wakes up to Suprabhatam and filter coffee. The instant coffee is looked down upon, in the south side of India.

There are a variety of brands local and established coffee brands ,which people patronise according to their taste.

The Kumbakonam degree coffee is very famous for its fragrance and distinct taste.

The coffee powder is made of two beans mainly, Arabica and Robusta. Mostly the beans are ground in 1:1 proportions for a thicker coffee with a great colour.

The filter coffee powder sold by popular brands are now available packed in most supermarkets and stores all over the country. However, some finicky coffee lovers have their special shops in the areas they live where the beans are roasted and ground as and when demanded. Some have even stopped adding chicory to the coffee powder due to its harmful effects. These retain the aroma of the coffee than the prepackaged ones in the markets.

Method

  1. Boil half litre of milk.
  2. Take a coffee filter and 4 to 5 tablespoons of coffee powder. Top it with hot boiling water(half cup). Leave it undisturbed for 10 minutes or so.
  3. Let the decoction get collected in the lower chamber of the coffee filter.
  4. Take steel tumble, add sugar as desired, add 2 tablespoon of the decoction, add hot milk. Take a dabara and mix it well by pouring into it from a height to get frothy coffee. Of course this needs some experience and practice.
  5. To get a stronger coffee , add more decoction. To make a light coffee likewise add less decoction.
  6. The quality of milk adds to the taste of the coffee. When the milk is  directly got from the cows the coffee tastes better than the packet milk sold and used by most of us.
  7. The decoction powder cannot be used second time, as the coffee decoction becomes lighter and tasteless. Old powder needs to be discarded and new powder needs to be put in the coffee filter.
