Bajji

Bajji, Bhajiya or fritters as they are known world over, is popular evening snack, which is liked by young and old. These are deep fried vegetables coated with chiefly rice and gram flour. This is the best snack to be had on a rainy day along with hot chai or tea. Its very easy,tasty  and can be made quickly. This is a common snack, when guests come unannounced, as it needs basic ingredients and not great expertise. Most tea shops in India especially in the south, sell Bajjis along with tea as an evening snack .

Ingredients

  • Chickpea flour/ besan  – 1/2 cup,
  • Rice flour – 1 cup,
  • Maida – ½ cup,
  • Salt – 2 teaspoon,
  • Chilli powder – 2 to 3 teaspoon,
  • Asafoetida – ¼ teaspoon,
  • Sour curd – ¼ cups (optional),
  • Baking soda (optional) – 2 pinches,
  • Oil for deep frying,
  • Vegetable for the bajji (Preferred) : Onions, Brinjal, Raw Banana Plantains, Potatoes, Chow chow, Jalapenos or Bajji milagai or any other one vegetable of your choice.

Method

  1.  Peel and cut the Vegetables in thin circles (onions, potatoes, chow chow) or thin and long slices , (plantains, Jalapenos, etc).
  2. Mix all the flours, salt, asafoetida, chilli powder, curd and baking soda. Baking soda gives crispness to bajji , while the curd gives tanginess to the bajji.
  3. Add water till its thick but not very watery.
  4. Heat oil in a deep  broad frying pan, dip the vegetables in the mixed batter, one by one and put it in the oil.
  5. Deep fry, five to six bajjis at a time . Don’t crowd the pan.
  6. Deep fry till golden brown.
  7. Serve hot with chutney, ketchup or sauce of your choice.

Note

 

  1. The leftover dosai or idly maavu or batter can be used to make the bajjis. Just add chick pea flour to it. As the batter is fermented , do not add baking soda or curd to the mixture.Add all the other ingredients and proceed as for the bajjis.
  2.  chopped Amaranth leaves and shredded Cabbage can be added to the batter to  make  bajjis.  Tender Snake gourd and  Ridge gourd can be cut into rings , added to the batter , to make bajjis
  3. Nowadays, various types of bajjis are being made from Paneer, cheese slices , bread etc, which are well liked amongst children and teenagers .
